Zero Waste Pistachio, Oat & Coconut Milk

Hi! Welcome to my first blog post of 2019 :) I made this non-dairy milk for the second time this morning and it’s so good that I had to share the recipe! Even though I’ve been vegan for over 7 years, I’ve only made my own non-dairy milk a handful of times and that needs to change.

This recipe is super healthy for you because there is literally nothing else added except for the ingredients that you see. It’s extremely easy to make too. All you need is measuring cups, a blender, a cheesecloth (I only just bought one last month and it was very cheap and really does make all the difference), and a jar to store your “milk” in.

This recipe is zero waste because I got all of these ingredients from the bulk store (in Canada we have a bulk food store called Bulk Barn that encourages you to bring jars). So far the only thing I’ve used this milk for was oatmeal but it would be great for cereal or smoothies as well. It’s super smooth and creamy. The reason why mine is a bit darker is because I used date syrup as a sweetener, but normally it should be a creamy colour with a hint of green from the pistachios.

Ingredients:

  • 1/2 cup quick oats

  • 1/4 cup shredded coconut

  • 1/4 cup pistachios

  • 2 litres of filtered water

  • 2 tablespoon of date syrup, maple syrup or a sweetener of your choice (use more if you want it to be sweeter)

Method:

  1. Add all of the ingredients to a blender.

  2. Blend for around a minute.

  3. Pour into a cheesecloth then squeeze out all the remaining liquid.

  4. Pour into a jar then store it in the fridge. I would say use it within 5 days or less.

  5. Save the “pulp” because you can use it for cookies, crackers, bliss balls and more.

That’s it! This is such a simple recipe. It saves you money, it’s great for the environment, and healthy for you as well. And most importantly, it’s not contributing to the evil dairy industry. If you make this please let me know, I would love to hear what you think :)
