Tofu Scramble

Tofu scramble is the perfect replacement for scrambled eggs. It’s delicious, healthy for you, easy to make, and most importantly - doesn’t harm any animals. Feel free to play around with this recipe. You can substitute the veggies for whatever you have on hand and I’m sure it will still turn out amazing :)

Ingredients:

  • 1 onion

  • 3 garlic cloves

  • 1/2 zucchini 

  • 1/4 cup mushrooms 

  • A handful of kale leaves 

  • 1/2 block of tofu (can be any type but I like using extra firm)

  • 1/2 teaspoon paprika

  • 1/2 teaspoon turmeric

  • 1/2 teaspoon garlic powder 

  • 1 tablespoon nutritional yeast  

  • 1/4 teaspoon salt - if you use kala namak/Himalayan black salt it gives it a very “eggy” flavour

  • Pepper to taste 

  • 1 tablespoon olive oil (optional)

Method:

  1. Start by chopping the onion and garlic. Sauté that in a pan with olive oil or water if you want.

  2. While that’s cooking, chop up your zucchini, mushrooms and kale into small pieces then add them to the pan as well.

  3. Next, break the tofu with your hands into the pan. If there’s a lot of excess liquid, you can squeeze the liquid out into a bowl first. Breaking it with your hands helps get the perfect crumbly consistency!

  4. Mix and cook everything together for around 10 minutes or until all the veggies are cooked.

  5. Add the salt, nutritional yeast, black pepper, paprika, and garlic powder.

  6. Serve with hash browns, toast, or whatever else you want :)
