Ginger Apple Baked Oatmeal

This is such a comforting fall/winter breakfast. It smells delicious while cooking and it feels like you’re eating dessert. It takes a while in the oven, but I promise it’s worth it!



  • 3 tablespoons maple syrup

  • 2 tablespoons peanut butter 

  • 1 tablespoon ginger syrup (can be substituted with any other sweetener) (I got mine from here)

  • 1/4 cup crystallized ginger (I used The Ginger People’s)

  • 2 cups quick oats

  • 2 cups rice milk (or any other non-dairy milk)

  • 3 apples 

  • 1 teaspoon cinnamon 

  • 1 teaspoon vanilla extract 

  • 2 tablespoons flax seeds


  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Mix the oats and non-dairy milk together in a bowl. Set aside.

  3. Chop the apples (I keep the skin on). Also chop the crystallized ginger into smaller pieces if they’re too big.

  4. Next add the oats & non-dairy mixture to a loaf pan. Mix in the cinnamon, vanilla extract, flax seeds, maple syrup, peanut butter, and ginger syrup.

  5. Then add the apples and crystallized ginger.

  6. Mix everything together, then place it in the oven for 50 minutes.

  7. This will make around 2-3 servings. I top mine with tahini and maple syrup, it’s an amazing combination!
